Chicken Broccoli Stir Fry

Ingredients

Sauce:

  • 1 tbsp cornflour/cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp Chinese cooking wine or Mirin
  • 2tbsp oyster sauce
  • 1 tsp sesame oil
  • Dash of white pepper

 

Stir fry:

  • 1 tbsp oil
  • 1/2 onion
  • 1 garlic cloves
  • 300g/0.6 lb chicken thighs or breast, thinly sliced
  • 240g/ 8.4 oz broccoli florets
  • 0.75 cups water

      Directions

       

      1. Broccoli: Steam or boil the broccoli using your preferred method until it’s cooked to your liking (it won’t cook further in the stir-fry). I typically steam it in the microwave for 3 minutes on high. Drain thoroughly.
      2. Sauce: Combine the cornflour with the soy sauce, then mix in the remaining sauce ingredients until smooth.
      3. Tenderizing option: If using chicken breast, consider tenderizing it with this method. (This step isn’t necessary for chicken thighs.)

      4. Cook: Heat the oil in a large skillet over high heat. Add the garlic and onion, stirring for about 10 seconds until the garlic turns golden. Next, add the chicken and cook for approximately 2 minutes, or until it’s just cooked through.

      5. Combine: Add the broccoli, prepared sauce, and a splash of water. Stir well and cook for 1–2 minutes, until the sauce thickens, becomes glossy, and evenly coats the ingredients.
      6. Serve: Serve hot over rice.
