Ingredients
- 8.8 oz / 250 g soy granules
- 2 cups / 500 ml vegetable broth
- 14 oz / 400 g mushrooms (sliced)
- 14 oz / 400 g cooked rice
- 1 cup / 250 ml low-fat vegan cream
- 1 teaspoon paprika powder
- 2 tablespoons oil
- 2 tablespoons vegan butter
- 1 large onion (chopped)
- 1 cup peas
- Fresh parsley (chopped)
Directions
- In a bowl, mix vegetable broth, paprika powder and boiling water.
Soak the soy granules in this mixture for 10-15 minutes. - Heat oil in a pan and add the soaked soy granules. Season with your preferred seasoning and let it fry until golden brown.
- In a separate pan, melt vegan butter over medium heat. Add sliced mushrooms and cook until tender.
- Add chopped onions to the mushrooms and cook until translucent.
- Stir in the peas and continue cooking for a few minutes.
- Pour in the low-fat vegan cream and add fresh parsley. Mix well.
